My name is Jens Knoop, I’m 51 and moved to the UK from Germany in the 90s to study photography in Bournemouth. I then spent several years living in central London and traveling the world filming opinion polls. Wanting a change from London life and international travel, I moved to East Sussex and decided to start my own business. I decided to pursue my passion for chocolate – and that’s how Knoops was born.

Tell us about your business

It’s called Knoops and I opened my first store in Rye, then expanded to London with stores in Kensington, Chelsea, Clapham Junction and Richmond.

Brighton was a natural next step, as a bustling tourist destination with its highly engaged food scene. Finally, we opened a store in Oxford this month. Knoops is still expanding and we are exploring options for our next store. We also have an online store where we sell our products to enjoy at home.

What is the concept behind your business?

The Knoops philosophy is simple. We focus on quality, sustainable chocolate drinks that offer the widest range of choice compared to anywhere else on the high street. We are here to allow visitors to indulge their love of chocolate.

The Knoops in-store experience is truly unique. We have a process that I called Knoopology. It’s the ultimate personalization process – a four-step method where individuals choose their favorite hot or cold drink followed by their chocolate percentage (we have over 20). They then choose their dairy or plant-based alternative before finally adding tasty additions to their chocolate. We pour it as a creamy hot chocolate, or over cold milk and ice for an iced chocolate. It can even be mixed with ice cream for a delicious milkshake.

The Knoops online store sells the ingredients, appliances and recipe book to allow customers to get creative and experience the joy of creating delicious chocolate drinks at home. This allows them to become a real Knoopologist.

Are consumers increasingly demanding with chocolate?

Consumers are increasingly interested in chocolate, its provenance and the distinctive characteristics of different single-origin chocolates. There is such variation in sweetness and flavor notes in our range of over 20 chocolates, that there is something for everyone. It really feels like we’re creating a new category, much like coffee 30 years ago, given the interest we’ve seen in our stores and our unique offering.

Is sustainability important to you?

We source our ingredients from a wide range of suppliers, some large, some small. Responsibility and sustainability are embedded in our DNA. Knoops uses as many recycled, recyclable and compostable materials as possible in everything from chocolate flakes to take-out cups and even store design. We only source fully traceable chocolate that positively affects the communities where it is produced and we have partnered with a select group of chocolate makers who are genuinely committed to improving the sustainability of their cocoa, because we know the industry does not is not perfect and still has to go.

You include lots of herbs and spices. How do you balance the flavors?

We mainly recommend our blends – 34% milk chocolate, 54% dark and 70% extra dark – as the best options to provide additional flavor of herbs, spices or fruits. Our unique origins have distinctive characters, like our 43% butterscotch and hazelnut, that are often best left unaltered with any flavor other than a pinch of sea salt, which helps accentuate the notes. of caramel.

What are your plans for the future?

We have big plans for the future. We look forward to the summer season in Brighton and welcome tourists to the area. In Oxford, we are having great success with the new store. We also have big ambitions to open around ten new stores by the end of 2023 and expand our online store with delicious new products and gift options. It’s an exciting time for Knoops.

Do you have anything else to share?

I never thought I would have the opportunity to write a book. It has always been one of my dreams. My cookbook, Knoops – All-Day Chocolate Recipes, features 40 drinks and 20 dishes, all created using Knoops chocolate flakes and ingredients found in most kitchen cupboards.

With sweet and savory recipes from breakfast to lunch, dinner and dessert, the book gives readers the opportunity to savor new flavor combinations and experience even more Knoopology at home.

Sometimes you just need a hot chocolate, and sometimes it’s 2am when all you have is an expired Swiss Miss packet hidden in the back of your pantry. What a sad situation. Avoid this tragedy by always having hot chocolate mix from Katherine Anne Confections, proudly made in Logan Square. A NEW Kendal Café presents its delicious selection of cocoa beans and hot chocolates.

Kakaw, located in the Elephant Yard shopping mall, is owned and operated by Tomas Hornak and Miska Dolinayova.

The two business owners met while working in hospitality in East Sussex after moving to England from their native Slovakia.

They came to the lakes to work at Drunken Duck, near Ambleside, before opening artisan hot chocolate shop Kakaw, on Library Road, in December.

The store’s name, Kakaw, comes from the Native American word for cocoa bean.

Miska said: “We’re both from northern Slovakia which is quite mountainous, maybe that’s why we moved here from East Sussex because we both love the mountains.

“Everyone is very friendly here and we’ve had overwhelming support from businesses near Elephant Yard.”

Tomas said they decided to focus on artisan chocolate because it was something new for Kendal.

He said: “Chocolate isn’t as popular as coffee right now, but 20 years ago coffee wasn’t nearly as popular as it is today.

“There are so many options and variations with hot chocolate and we want to help people understand that there is more to it than just powder with hot water or milk.”

Kakaw serves drinks using everything from white chocolate to 100% cocoa, with customers able to choose from a variety of different types of milk and add everything from marshmallows to salt, chili and even herbs like rosemary.

“When it comes to finding different flavors and sources of hot chocolate, we’re really only limited by the size of the shelf we can keep them on,” Tomas said.

“How the cocoa beans are grown and roasted also makes a difference and of course the type of milk you use is also important.

“Most of the chocolate comes from South America; so, Venezuela, Ecuador, Brazil, but there are some from Africa and another from Java. We work with a few small companies who source directly from farmers and ensure they are paid fairly for the product. »

As the weather improves, he says they could start serving refreshing milkshakes with hot chocolate, which has proven popular in the winter months.

“I think to successfully run a place like this, you have to deliver a quality product and if you do, people will come,” Tomas said.

“You can have something interesting and it can entice people to come once, but if it’s not of quality, they won’t come back. We are getting busier all the time; people enjoy quality hot chocolate and we’ve had lots of families with kids come in for a treat on the weekends.”

When I was in college, the coldest, snowiest days were always an excuse for my roommates and I to head to the Dollar Store and stock up on sugar-free instant hot chocolate. My go-to platonic hot chocolate will forever be the thick, decadent version that Maury Rubin perfected at the defunct City Bakery. Over the years, I’ve sought to recreate Rubin’s masterpiece in my home kitchen, a mission that gets harder and harder as time passes since tasting the original. However, homemade chocolate covered strawberries are both personal and delicious. Give me a dozen for Valentine’s Day plus a diamond ring from Tiffany’s for each of my fingers like I won the last 10 Super Bowls and I will be a happy camper.

Food52’s Recipes Resident Caroline Gelen Has Already Won Valentine’s Day With Her Making Technique Marbled Chocolate Covered Strawberries. If you also decide to make these marble masterpieces, good technique is nothing without proper storage. So what’s the best way to store chocolate covered strawberries? Before doing anything (chocolate wafer nibbling included), stick a baking sheet in the freezer. Recipe: Marbled Chocolate Covered Strawberries

Ingredients

  • 1 pound large ripe strawberries, at room temperature
  • 6 ounces (170 grams) dark or semi-sweet chocolate, chopped (1 cup)
  • 1 teaspoon refined coconut oil (optional)
  • 2 ounces (56 grams) white chocolate, chopped (1/3 cup)

  1. Place a baking sheet in the freezer.
  2. Lay a clean towel on a work surface. Wash the strawberries thoroughly with tap water at room temperature, then throw them on the towel. Move them gently to dry them. RASPBERRY AND WHITE CHOCOLATE CAKES

White chocolate (cover), melted – 150 g

Liquid glucose – 30g

Water – 30ml (A)

Agar-Agar, 8 g

Water (B) – 25ml

whipped cream – 150g

For the raspberry jelly
Sugar – 30g

Raspberry puree – 100g

Agar-Agar, 6g

For the red color spray
Melted white chocolate – 100g

Melted cocoa butter – 50g

Red soluble coloring in chocolate – a few drops

Method
For the jelly, line a 6-inch stainless steel ring with cling film. Cook the sugar, raspberry purée and sugar until boiling. Pour the cooked jelly into the prepared ring and put in the refrigerator for 3-4 hours.

Spread the dough on a large piece of waxed paper, form the crumbles into a square and roll it into a flat square keeping the thickness about ½ inch. Use a heart-shaped cookie cutter and make cutouts in the cookie dough. Place it on a greased baking sheet and bake for 15 minutes at 180 degrees. Let harden and store in an airtight container. Serve with a little mousse/hot chocolate/coffee.

FUSION PLEASURE: STRAWBERRY SANDESH PIE
Foodie Purabi Naha, who shared her recipe, said, “I wanted to do something that had a Bengali touch, so I decided to do a fusion with the traditional Bengali sweet called sandesh (shondesh). Since strawberries are suitable for Valentine’s Day, I thought their pink color would be perfect in dessert. Here is my Strawberry Sandesh Tart which is made with curd and chenna or paneer.

Ingredients

Fresh curd (unsweetened) – 400g

Granulated sugar – 2.5 tablespoons

Hanging oak – 175 g

Strawberry syrup – 2.5 teaspoons

For the pie crust
Refined flour – 150 g

Salt – A little more than ¼ tsp.

Cold butter (cut into small cubes) – 100 g

Toasted sesame seeds – 2 teaspoons

Water – As needed, to bind the dough

For the strawberry reduction

Large strawberries (roughly chopped) – 4

Sugar – 3 tablespoons

For garnish

Blanched finely slivered almonds (toasted) – 2 tbsp

Method

To make the dough, mix the butter with sifted refined flour and rub it in with your fingertips until the mixture resembles fine breadcrumbs. Add sesame seeds and season with salt and knead with a little water to form a dough. Cover with cling film and refrigerate for 10 minutes.

Roll out the dough and line a 6-inch circular pie pan. Prick with a fork all over the base. Line the bottom with parchment paper or aluminum foil. Garnish with beans and blind bake in a preheated oven at 190°C for 15 minutes. Remove the beans after 15 min and cook for another 10 min. The bottom of the pie should be evenly browned. Cool to room temperature. While the pie shell is baking (in step 1), make the strawberry reduction by heating a frying pan and adding the strawberries over medium heat. When the strawberries are pasty, sprinkle with sugar and cook until the sugar melts and the strawberry reduction becomes thicker. Cool and puree. Add the granulated sugar to the suspended curd and mix using your fingers.

Mix the suspended chenna with the syrup and knead it with your palm until the chenna becomes very smooth and even. Mix it with the suspended curd-sugar mixture and knead it into a smooth ball. This becomes the filling.

Garnish the pie by pouring the strawberry filling into the pie shell. Rebake the tart for about 10 minutes at the same temperature (190°C) covering it with aluminum foil. Remove and let cool. Garnish with slivered almonds and sprinkle with strawberry reduction. Store at room temperature. Eat within a few hours, as refrigeration will make the pie a little soft.
