Summer special: 6 delicious mango recipes to try this summer
It’s the season for juicy and delicious mangoes and not every lover of the king of fruits is getting the chance to indulge in a plate of this fresh-cut seasonal delight. Take it with your meals or cherish it as a midday snack, many nutritionists would advise you to opt for mangoes this season as they are a storehouse of magnesium and potassium and can even prevent inflammation of the heart additionally a range of other benefits. There are many ways to consume mangoes in the summer. In addition to eating as is, you can try making ice cream, drinks, shakes, desserts, and even pair them with your favorite breakfast cereals. Here are some amazing mango recipes to try.
1. Dairy-Free Mango Ice Cream
Recipe by Chef Naresh Behera, Executive Sous Chef, Regent Club by Brigade Group
Dairy Free Mango Ice Cream

Ingredients:
• Mango – 500 g (fresh and ripe)
• Coconut Cream – 500ml
• Coconut milk – 450ml (thick)
• Sugar – 150g
• Honey – 40ml
Method:
• Add the coconut cream, coconut milk, honey and sugar to a saucepan and bring to a boil over low heat.
• Let simmer for a few minutes.
• Remove from the heat and pass through the blender (still hot) with 450 g of mango and reduce to a fine paste.
• Transfer the mixture to a container and refrigerate for 8 hours.
• Add the cooled mixture to a hand churn or ice cream churn and churn for 25-40 minutes until you achieve the smooth creamy consistency of your choice.

• Transfer the mixture to a pre-chilled tray, cover with aluminum foil or plastic wrap and freeze until the ice cream is set. Serve with diced mango pieces.
2. Mango Orange Liqueur Cheesecake with a Sugar Ball

Ingredients:
• 1 cup sweet cookie crumbs
• 60 g of melted butter
• 2 tablespoons of cocoa
• 500g block cream cheese, softened
• 3/4 cup caster sugar
• 1/4 cup orange juice
• 2 tablespoons of Cointreau liqueur
• 1 1/2 tablespoons gelatin dissolved in 1/4 cup boiling water
• 2 teaspoons grated orange zest
• 1/2 cup lightly whipped cream
• 425 g fresh mango, diced
• 2 sheets of golden gelatine
• 50 g sugar ball

Method:
• Line the bottom and sides of a 20 cm (8 inch) round mold
• Combine cookie crumbs, butter and cocoa. Press into base of springform pan; coldness
• Drain the mango slices, reserving the syrup.
• Put the syrup in a bowl and purée the mango slices.
• Set aside 3/4 cup of mango puree for the cheesecake and place the remaining puree in the bowl with the reserved syrup
3. Coconut Mango Oatmeal

Ingredients:
• ½ cup rolled oats
• ½ cup unsweetened milk (Almond)
• ½ cup of mango
• 1 tablespoon grated coconut
• 1 1/2 honey
Method:
• Heat the milk. Add well-cooked rolled oats

• Add diced mango and grated coconut
• Finish with honey
4. Mango Dessert Glass

Mango dessert glass
Ingredients:
• 1 cup of milk
• ½ cup of cream
• 1 tablespoon of honey
• ½ teaspoon ground cinnamon

• ½ cup of mango pieces
• Spring mint for garnish
Method:
• Heat the pan, add the milk and cream together and reduce by half
• Then add the honey, cinnamon powder
• Remove from the heat, then add the mango pieces
• Pour this mixture into a glass. Freeze it for two hours
• Then serve garnished with spring mint
5. Mango Smoothie

Ingredients:
• 1 1/2 cup of yogurt
• 1 cup of mango (Alphonso)
• 1 cup of milk
• 1 tablespoon of honey
• ½ cup of milk
Method
• Take a bowl and add the yoghurt, milk, mango pulp, honey and mango ice cream
• Then mix with an immersion blender
• Serve in a glass

6. Bircher Muesli with mango

Bircher Muesli with mango
Ingredients:
• 1 cup of oats
• ½ cup diced mango
• 1 cup of yogurt
• 2 cups of milk
• 1/2 cup of honey
• ½ cup of mango pulp

• 2 tablespoons raisins
• 1 1/2 tablespoon of apricot
Method
• Take a bowl, add oat flakes, milk, honey, mango pulp, raisins, apricot and yogurt
• Soak it overnight
• Mix well before serving
• Then add the freshly cut mango
• Serve in a bowl
