6 egg yolks
3/4 T white sugar
1 & 1/2 C brewed coffee
40 boudoirs (Italian cookies)
16 cl of mascarpone
2 cups heavy whipping cream
2 C unsweetened cocoa powder
Chocolate bar shavings (optional
In a metal or glass bowl, whisk together the yolks and sugar. Place on a saucepan filled with water at a low boil and whisk for about 10 minutes until the mixture is lighter in color and slightly thickened. Remove from the heat and let cool slightly.
Arrange the ladyfingers in a single layer at the bottom of a 13 x 9 inch dish. Pour half the coffee evenly over the cookies.
Add the mascarpone to the yolk mixture and mix until well incorporated. Pour half the mixture over the cookies.
In a separate bowl, beat thick, cold whipping cream until stiff peaks form (about 3-4 minutes). Spread half of the cream on the yolk layer. Dip and arrange the remaining ladyfingers on the whipped cream.
Spread the rest of the yolk mixture and the rest of the whipped cream. Sprinkle with cocoa powder and garnish with chocolate shavings. Refrigerate, covered, until ready to serve.
